<p>A double boiler is the perfect cookware for delicate cooking. Whether you’re melting cheese, making chocolate sauce for ice cream, making hollandaise sauce for poached eggs or making candy you&#8217;ll need a double boiler to do it right.  A double broiler consists of a sauce pan with an insert that is placed on top of the saucepan.  To cook with a double boiler you must fill the bottom saucepan pan with enough water to allow heat to circulate and prevent burning.  Since the double boiler rests above water and the steam from the lower saucepan heats the boiler it makes it easy to gently cook foods without scorching them.  Double boilers come in various sizes as well as styles including stainless steel, copper, aluminum and  porcelain.  There are a couple of ways to buy a double boiler.  Since not everyone needs a double boiler a lot of cookware sets have a double boiler that is sold separately that you can purchase when you are ready for it.  You can also purchase a double boiler set that comes with both a double boiler and a saucepan.  When you purchase the set you still have the option of using the sauce pan without the insert.</p>

<p><strong>Non-stick Coated:</strong>  Non-stick woks can be made from many different materials and many different types of coatings.  These factors will play a role in the weight, durability, heat retention and heat control.  Some non-stick coatings don&#8217;t support the high heats used during stir-frying so be informed on the recommended heat levels before buying a non-stick wok for stir-frying. </p>
<p><strong>Wok Cooking Tips: </strong></p>
<ul>
<li>When frying, stir-frying or sauteing be sure to preheat the wok to the actual cooking temperature.  Preheating the wok at medium to medium high heat will make your food begin cooking properly once it touches the pan.  If the wok is preheated on high you will lose heat control.</li>
<li>By rubbing a stick of butter to the inside of the wok you can tell if the wok is preheated.  If the butter bubbles it is ready.  If the butter turns brown the pan is pre-heated to high and needs to be lowered.</li>
<li>Don&#8217;t add all of your food at once, this can cause uneven cooking and prevent things from browning properly.  Cook meat fist and remove it from the wok.  Cook vegetables and then add the meat back in at the end.</li>
